Pineapple-Glazed Baked Seitan

Mark and I visited the parental homestead, that is, my parents’ house, this weekend. While I was there I photographed a bunch of recipes from my mother’s little-used recipe box, with hopes of veganizing a few old favorites. My mother doesn’t cook, so this isn’t a very big undertaking.* Many of the recipes I grabbed are things I’m sure my mother never actually made, either. Anyway, one of my favorite meals as a kid was baked ham, which my mother and my grandmother used to make topped with pineapples. I reinvented this as baked seitan today. It turned out fairly well, although the seitan – the UnHam from Simply Heavenly! – wasn’t very “hammy” and I plan to play around with the seitan in the future. I’ll give you the recipe I used tonight in the meantime, though.

First, here is the original version of the Pineapple-Glazed Baked Ham. I talked to my mother about this recipe and she’s not sure where it originally came from and doesn’t specifically remember it being my grandmother’s, however, I am quite sure my grandmother made ham like this. My mother actually uses this recipe as well, on those extremely rare instances she takes it upon herself to bake a ham. She says the recipe may be hers, but I’ve never known my mother to invent a recipe on her own. But maybe she did!

1 8-10 lb pre-cooked ham
1 T. butter
1 1/4 cup brown sugar
whole cloves
4-6 slices pineapple
1 scant cup vinegar
1/2 cup water
1 cup catsup
1/4 tsp ground cloves
1/4 tsp ground mixed spices

Remove rind from ham; rub with butter. Rub ham with 1/4 cup brown sugar. Score fat surface in squares and place whole clove in each square. Place ham, fat side up, on rack in roaster which has been lined with enough aluminum foil to completely enclose the ham. Place pineapple over top. Boil remaining ingredients including remaining brown sugar for 5 minutes. Pour sauce over ham. Close aluminum foil over top. Bake at 300 degree oven for 2 hours, 45 minutes to 3 hours. Occasionally baste ham with sauce. Thirty minutes before end of baking time, open foil and return to oven to brown. (Heat until 130 degrees F.)

And now my version:

Pineapple-Glazed Baked Seitan

2 pounds ham-flavored seitan (a recipe follows)
1 tsp vegan margarine
1/3 cup brown sugar, divided
whole cloves
3 slices pineapple
scant 1/4 cup vinegar
2 Tbsp water
1/4 cup catsup
pinch ground cloves
pinch allspice

Preheat the oven to 300 degrees Fahrenheit. Remove 1 Tbsp of the brown sugar and set aside. Place catsup, vinegar, water, ground cloves, allspice, and remaining brown sugar into a small, heavy saucepan and heat over medium heat until bubbly, then reduce heat and simmer for 5 minutes.

Meanwhile, rub one teaspoon of margarine over seitan …

… then rub with the reserved tablespoon of brown sugar.

Score the seitan perpendicularly into diagonals, then stick a whole clove in the middle of each diamond.

Place the seitan onto a piece of aluminum foil that is large enough to completely cover it, and place the pineapple rings on top of the seitan.

Place the seitan-filled foil into a loaf pan …

… then pour the sauce over the seitan …

… and close the foil up.

Place in the oven and bake for 30 minutes. After 30 minutes, remove and open the foil up, then continue baking another 30 minutes.

Remove and reserve the pineapple rings.

Remove the cloves.

Slice the seitan as you would ham.

Serve, topping with the leftover basting sauce if desired, with pineapple rings on the side.

The verdict on this was somewhat mixed. As a “baked seitan”, it was successful, however, as “ham”, a bit less so. It tasted like seitan, not ham. I’m not sure how much I really want to mimic the flavor of ham – very real-tasting fake meat freaks me out – but I think I can come up with something more hammy than this. That said, all of the “un-meat” seitan recipes I’ve made from Simply Heavenly! are good and this was no exception. Mark said he really liked “the presentation”, and since this was my favorite meal when I was young, I liked it very much myself. Therefore I plan to make the “ham” taste a little more authentic in the future. If you go in having no hopes of ham, the following recipe is great!

(lightly adapted from Simply Heavenly!)


(Tigger of course was right on the nutritional yeast. Also, check out the new salt pig my mom gave me – I love it!)

1/2 cup low-sodium soy sauce
4 tsp Kitchen Bouquet
1/4 cup nutritional yeast
1/2 tsp rubbed sage
1 tsp freshly ground black pepper
1 tsp oregano
2 tsp garlic powder
2 1/2 tsp liquid smoke
2 tsp canola oil
2 tsp salt
4 cups water
1 box (about 2 1/4 cups) vital wheat gluten
1 cup chopped onion

Whisk together all ingredients except the vital wheat gluten and the chopped onions in a pressure cooker.

Place the vital wheat gluten into a medium bowl.


*Sigh*

Remove 2 cups of the liquid from the pressure cooker and mix with the vital wheat gluten,. I just use my hands.

Add the onions and an additional 4 cups of water to the pressure cooker and set over medium high heat on the stove.

Meanwhile, form the seitan into a log shape and wrap tightly in cheesecloth.


I didn’t have any kitchen twine, so I ripped two long, thin lengths of muslin and used those to tie the ends like a Tootsie roll.

Place the wrapped “log” into the broth in the pressure cooker.

I didn’t even realize what Tigger was doing until after snapping this picture.

He is so bad!

Don’t let your cats do this.

Put the lid on the pressure cooker and bring up to pressure, then reduce heat to medium-low and cook for 35 minutes. Run under cold water to bring pressure down quickly.

Remove seitan from cooker and allow to cool a little bit, then unwrap.

For lunch tomorrow, I intend to make a sandwich using several slices and some hot sauce my friend made using brown sugar that I think will go very well with the “unham”.

* By the statement that my mother does not cook, I do not mean to imply that we didn’t have a hot meal for dinner every night when I was growing up, because we did, and it was very rarely take-out from the sub shop, nor did we go to restaurants. It even regularly involved what I would term “cooking”.

Smoked Seitan Butt and Green Beans

Pork is somewhat of a mystery meat to me. In fact, until as recently as last week, I went around proclaiming I’ve never eaten pork in my life. I wasn’t raised vegetarian, or Jewish, or Muslim, we simply didn’t eat a wide variety of meats when I was growing up. All I really remember ever eating is ground beef, chicken, fish sticks, hot dogs, and Steak-Ums. My favorite was ham, but I only got that at my grandmother’s. Now, I know pork comes from pigs and ham comes from pigs, but still I don’t know if ham is a subset of pork or vice versa or what, and frankly, I don’t care to know. All I knew is my family at no time ever served me anything and called it “pork”, and as I became vegetarian at 15, I figured I’d never eaten it.

But then last weekend my mother told me that she and my aunt had made Smoked Butt and Green Beans, a family recipe she made from time to time when I was growing up, for my dad Saturday night, and it turns out that the “butt” is actually “pork butt”. So I guess I have eaten pork. I can remember laughing at the name of the meal when I was a kid and asking why it was called “butt” and my parents telling me it was the butt of the pig and me not believing them. Talk about avoiding the issue of where your food comes from! I thought someone was just being silly when they named the meal. I’ve always been an animal lover and I’m not sure I would have wanted to eat it if I had really thought it was an animal’s butt, but on the other hand, I was far from being a picky eater and loved meat as much as any other food until I started thinking about things more thoroughly. My mom recently transcribed parts of my baby book and apparently at even at three months, baby Renae ate “everything”.

Anyway, my mom included the recipe for Smoked Butt And Green Beans in her email with the note, “I guess you can’t really veganize it.” A-ha! Challenge alert! At first I wasn’t too interested in trying to veganize it because it’s so simple that much of the flavor must come from the “butt” and not only do I not care to eat stuff that tastes like meat, but I honestly haven’t the faintest idea what smoked butt or any type of pork tastes like. I do remember eating it, but no particular memory of the taste comes to mind. But then I found myself with some leftover seitan and some green beans for which I had no other plans, and I know that Smark likes smoky flavors, so I started thinking maybe I would veganize that recipe after all.

The important thing here, I think, is not to think you’re really eating pork or anything that tastes remotely like pork. I have no idea what pork tastes like, so all I tried to do was give it a smoky edge, even though my mom says smoked butt doesn’t taste that smoky to her and if it did, she wouldn’t like it. Other than that, the name, “Smoked Butt” is appropriate because the leftover chunk of seitan I had really did look like the butt of some seitan!

The original recipe, which my mother got from her mother, is thus:

1 peck green beans
5 lbs. potatoes (cut in pieces)
1 (2 lb.) smoked pork butt (cut in 1/4s)
1 onion
salt & pepper
2 tsp. sugar per lb. green beans

Put green beans and butt in large pot with onion, salt, pepper, and sugar. Cook on slow boil for about 4 hours. Add potatoes, bring to a boil again; and then cook on a slow boil for another 1/2 hours or until potatoes are done.

Pretty simple, eh? Well, enough blabbing from me: on with the veganizing! Choose your seitan wisely for this one. Because it’s such a simple recipe, pick a flavorful rather than bland seitan. Vegan Dad’s Veggie Lunch Meat or Everyday Dish’s Corned Beef would be good, and Bryanna’s Soy and Seitan “Ham” (about 2/3 of the way down the page) is a logical choice. Who cares if what you choose tastes like or is supposed to taste like pork though? Just pick something you like the taste of.

Here’s what I did:

8 cups vegan “chicken” broth
6 drops stevia or 2 tsp sugar
1-2 tsp liquid smoke
3 Tbsp vegan “bacon bits”
1 pound green beans, trimmed and either chopped or frenched (I frenched them because I’m fancy, and also I thought they’d cook faster that way…and because I have a nifty bean slicer that I like to give an occasional workout)
1 pound seitan, sliced somewhat thickly
1 pound potatoes, chopped (or not, if you use peewees like I did)
1 onion, sliced
salt and freshly-ground pepper to taste

Put the broth into a large pot or Dutch oven and begin heating. Meanwhile, fry the seitan slices in a bit of oil.

Drain on a paper towel and when cool enough to touch, rip up into bite-sized pieces.

Trim the green beans …

… and either french-cut them or chop them into 2″ pieces:

Add the bacon bits, liquid smoke, stevia or sugar, seitan, green beans, onions, salt, and pepper to the broth and bring to a boil.

Cover and reduce heat to medium low. Simmer for half an hour. Add the potatoes and continue to simmer for 20 minutes or until the potatoes are done.

To serve, remove solid pieces with a slotted spoon.

I think I probably could have gotten away with throwing everything including the potatoes into the pot and just cooking for half an hour, maybe 45 minutes if I had chopped instead of frenched the green beans. I don’t know why the green beans cook for four whole hours in the original recipe. I also could have doubled the green beans; they were my favorite part. (Mark’s favorite part was the seitan.) I have to say that I wasn’t expecting much from this recipe. I mostly did it just for kicks, because my mother said I probably couldn’t, and figuring that even if it was turned out really boring, we could just put hot sauce on it: everything is good with hot sauce on it. It turned out pretty well, though. Mark really liked it and ate two bowls-full, then drank the leftover liquid out of his bowl. It’s a great way to use up leftover seitan and I’d make it again. I might add baby carrots next time; I bet that would be a good addition.

By the way, I googled “what does pork taste like?” as a research attempt before starting this meal and learned that it apparently tastes like human. Um, gross?

At any rate, smoked seitan butt is very metal!

Mark makes Vegan Dad’s Shaved Seitan BBQ Sandwich

Mark saw Vegan Dad’s Shaved Seitan BBQ Sandwich the other day and commented that he was going to have me make it for him because it looked so good. Vegan Dad responded that he was sure Mark could handle making it for himself. Well, neither Mark nor I were so sure about that, but we decided to try it and see. Follows are photos of Mark’s attempt to make Vegan Dad’s Shaved Seitan BBQ Sandwich.

First he rinsed the beans.

Then he measured one cup of them and added them to the blender.

He almost turned the blender on and blended his hand with the beans.

Then he measured the water …

… and the oil …

… and paprika.

But tried to eat the salt. (He also furtively put a third teaspoon of salt into the blender, which resulted in a severe reprimand from me.)

I don’t know what he’s doing here.

Then he had to crush the fennel, which he enjoyed.

The molcajete is very heavy …

… but Mark is very strong.

He finished measuring the spices.

Then he got into my sugarcane.

He was bored with grinding an entire teaspoon of pepper, even with my super-awesome grinder. (Clearly he doesn’t know how to have a good time.)

So he tried to amuse himself.

At this point in time, he decided he was going to make the remainder of the meal while wearing my very dirty oven mitts.

He was very proud of his ability to measure a teaspoon of soy sauce wearing the mitts.

Yay for Mark!

He decided he needed a “chef’s hat” in order to properly blend the ingredients.

The blended ingredients:

Next he measured the vital wheat gluten …

… and added the blended ingredients to it.

Then he kneaded everything together.

Why does it look like he’s throwing his brain around?

Here he was singing, “It’s log, log, it’s big, it’s heavy, it’s wood. It’s log, log, it’s better than bad, it’s good!”

Then he wrapped the log in foil.

And smoked it.

Then steamed it.

Then he went to play video games while I cleaned up this mess:

A little while later he returned to the kitchen to make another mess, a.k.a. the barbeque sauce. I told him to slice the onion. But didn’t realize for a minute or two that I had to tell him to first PEEL the onion.

So he peeled it and started slicing it …

… until I got nervous and told him to cut it in half and then slice it. Then he moved on to the garlic.

At this time, the log was ready to go into the oven.

He added some margarine to a large pot, then the onions and garlic, which he sauteed for 15 minutes.

Meanwhile he measured the remaining sauce ingredients. He has this habit of adding things to the bowl from as high up as he possibly can, in what I believe is an effort to maximize the size of the mess he makes.

It drives me crazy …

… even though he assured me he’d clean the mess up.

He doesn’t learn his lesson, either.

He tasted it several times to make sure it had enough hot sauce.

When the onions were cooked down, he added the other ingredients to them.

Then he went back to video games. After a while, he was very anxious to see his “log” and asked if he was allowed to look at it yet. I said yes.

He seemed unsure at first sight.

But then he tasted it and his eyes lit up.

He was very proud of himself.

He cut some into chunks …

… and sliced a couple of the homemade kaiser rolls I had made earlier in the day (which, by the way, utilized a pâte fermentée).

He added some of the BBQ sauce to the seitan pieces and stirred them together, oblivious to my pleading to please put the bowl on the counter to stir so he wouldn’t drop it.

Then he made the sandwiches and added a “garnish” to his plate.

Overall, he was very pleased with himself.

Mark said that he couldn’t believe he had made something that tasted so good. I concluded that although it did taste very good, Mark should probably not be allowed in the kitchen without constant and direct adult supervision.
