Braised Tempeh in a Tomato and Soy Sauce

I made another failed batch of tempeh over the long weekend. Sigh. Tempeh is so picky!! I’m nearly certain it got too hot. I think when I use the yogurt maker, at least in the summer, I need to not put the lid on it at all. I was putting it on ajar – really sort of half on, half off – for the first 12 hours or so, then removing it, but I forgot to remove it and when I remembered, the thermometer was reading 100 or 105 degrees Fahrenheit: too high. I pluckily tried a second batch that day, though – without the cover – and that one turned out. I can pretty much make tofu in my sleep, but I am no master of tempeh at this point.

Since I did manage to have a good batch, tonight was tempeh night. I’d had it in my mind to cook the tempeh in a tomato/soy sauce combination, which I thought might go well for my planned side dish, and flipping through a couple of cookbooks for inspiration, I came across exactly what I was looking for. This recipe was adapted from Mark Bittman’s Braised Tempeh Three Ways in How to Cook Everything Vegetarian.

Braised Tempeh in a Tomato and Soy Sauce

12 ounces tempeh, chopped in 1″ pieces
4 cloves garlic, minced or pressed
1 thumb-sized piece of garlic, minced or grated
1 large can chopped or whole tomatoes
3 Tbsp soy sauce
1 very small head Savoy cabbage
several leaves of regular or Thai basil, torn

Prepare the ingredients by mincing or pressing the garlic and mincing or grating the ginger:

Tear up the basil:

Chop the tempeh:

If you are using whole tomatoes, pulse with an immersion blender a few times to break them up:

In a large skillet or wok, fry the tempeh in some oil until it is beginning to brown:

Add the garlic and ginger and sauté for a minute. I added a little water to the pan because the tempeh had absorbed all the oil and I didn’t want to use more:

Add the tomatoes and soy sauce:

… and the cabbage:

Bring to a boil, then reduce heat and boil at an active simmer for 15-20 minutes. Toss in basil and season with salt and freshly-ground pepper to taste.

I served it with China Forbes’ Quinoa with Avocado from Tea and Cookies.

In other news, Mark and I went to a nearby regional park on Sunday and I captured this picture of a deer:

I’m sharing this with you mostly because that picture cost me more than 25 bug bites, from my scalp to my toes, and damn it, I’m making it worthwhile by showing it to whoever will look at it! I AM SO ITCHY! There were three deer in all, and they stood there in the distance staring at us for a full 5 minutes while I switched to my telephoto lens from the macro lens. I don’t know why. Perhaps they knew I was being eaten alive by bugs and found it amusing. Here is what I had just photographed with the macro lens, though:

And finally, this also has absolutely nothing to do with food, but since you always see pictures of Mark, and you always see pictures of Tigger, but you never see pictures of me, here is a self-portrait I took this weekend of me and Tigger. I’m completely amazed Tigger’s looking at the camera: I was controlling it with a remote. I always thought he was looking at me when I took his picture, but I guess he’s so used to having his picture taken he knows what to do even if I’m not behind the camera!

Sushi Bowl

Mark went to a friend’s house tonight, leaving me on my own for dinner. I embrace such evenings as opportunities to eat stuff he won’t eat, so tonight found me flipping through a few cookbooks in search of inspiration. I ended up with Mark Bittman’s How to Cook Everything Vegetarian and found myself intrigued by a very Bittman-esque table of “sushi bowl ideas”, the idea being you take a bowl of sushi rice, add a topping from column A, a sauce from column B, and a garnish from column C. Fast, easy, flexible, and scalable, i.e., good for a one-person meal. The only problem with the whole idea of a sushi bowl is Mark would have loved it. This is the boy who at least once a day claims he’s going on an “all-rice diet” (an idea I keep rejecting: “you need to eat a balanced diet”). Nonetheless I was getting hungry, so sushi bowl it was.

I am a fan of tsukemono, Japanese pickles. I make them sometimes, although not as often as I want to. I mean to start making them more often, but in the meantime, I usually have a few packaged kinds on hand to eat as sides with noodles, my go-to dinner when I don’t feel like really cooking. I have a bunch of such tsukemono in the refrigerator, so I chose that suggestion from Bittman’s column A. In column B for that row was something like “seaweed ‘mayo'”, which I almost completely ignored as I wasn’t about to put mayo on my sushi bowl, even if it DOES sounds like something the Japanese would do. But curiosity got to me and I checked out the recipe for “seaweed ‘mayo'”…and was surprised to find out it was not only vegan, but really just seaweed (arame) pureed with a tiny bit of oil and sake. So I whipped that up.

Column C was slivered scallions in this case, but I also added shredded nori and shredded shiso. To shred the nori and shiso, I rolled each up lengthwise, made two cuts lengthwise on the nori and one on the shiso, then snipped the rolls up into small pieces (like chiffonading).

Sushi Bowl

1 1/2 cups sushi rice, prepared
1/2 cup different kinds of tsukemono (Japanese pickle)
2 Tbsp “seaweed ‘mayo'” or other mild sauce
2 Tbsp chopped scallions
2 Tbsp shredded shiso (optional)
1 Tbsp shredded nori (optional)

Cook the rice in a rice cooker or on the stovetop and prepare as if for sushi (cut in sushi vinegar and salt to taste). For the sauce, choose something mild that won’t clash with the pickles, but also non-salty (the pickles are really salty, so a soy sauce-based sauce is probably a bad idea). Place the rice in a bowl, top with the tsukemono, then the sauce, then the garnishes.

Serves 1.

Here’s what it looked like after mixing it all up:

I served it with miso soup, which is incredibly easy to pull together. I discussed in an earlier post how to make dashi. Simply soak a piece of kombu in some water for at least half an hour. If you are in a hurry, you can simmer it instead for 15 minutes. Here’s how I usually make miso soup:

Miso Soup

2 cups water
1 3″ piece of kombu
1 tsp dried wakame
1 splash mirin
1 splash seasoned rice vinegar
2 Tbsp light miso
2 Tbsp chopped scallions
1/4 cup chopped tofu

Soak the kombu in the water for 1-24 hours (refrigerate if longer than a couple of hours), or, simmer it gently for 15 minutes. Remove kombu. This is the dashi. Rehydrate wakame by soaking in warm water for 10 minutes. It will expand considerably, so don’t use too much and give it enough room. Heat dashi in a small saucepan. Add a splash of mirin and a splash of seasoned rice vinegar. Remove 2 Tbsp of the dashi and place in a small bowl. Set aside. Add the scallions, rehydrated wakame, and tofu to the pot.

Add the miso to the reserved 2 Tbsp of dashi and stir until smooth. Add to the pot.

After adding the miso, do not allow the soup to boil. Serve when it has been warmed through.

Makes two servings.

Kale and Corn Chowder

I got Mark to eat TWO servings of leafy greens in one meal!! Does the glee in my voice translate to the typed word?!

I wouldn’t call Mark a picky eater by any means: he practically demands to eat Brussels sprouts, for god’s sake, but unlike me who will eat pretty much anything vegan that is NOT a mushroom, he has his limits, and leafy greens are in most cases across the line. Whereas I love spinach, he hates it, or cooked spinach anyway. He will eat raw spinach in a salad. And forget about collard greens or kale. So although I like collard greens and kale, I don’t make them that often because I know he won’t eat them. (Spinach is so easy that I will often make it as a side dish for myself.) But I bought some kale tonight because, by golly, that stuff is awesome for your health and we are going to eat it! So I came up with the following recipe that satisfied my requirements of maximizing the use of my my new toy AND getting kale down Mark’s gullet. And he LOVED it! While it was still cooking, he exclaimed “I don’t know what you are making, but it smells incredibly amazing!” And it seemed to live up to his expectations when he ate it.

Kale and Corn Chowder


I tried – I really did – to get a picture of the ingredients either without Tigger or with him in his entirety, but it wasn’t working out for me, so unfortunately you are stuck with a picture that includes his butt.

1 leek, chopped (white and green parts are okay)
1/2 celeriac (celery root), chopped (or 3 stalks of celery, chopped)
2 medium carrots, chopped
4 cloves garlic, minced
1 red chili pepper, minced (to taste)
4 cups water, veggie broth, or vegan “chicken” broth
1 small bunch kale, chopped
3 red potatoes, chopped (I had tiny potatoes and used however many are shown in the picture)
1-2 Tbsp vegan “bacon” bits (optional; adds a smoky flavor that attracts Smarks)
1-2 cans creamed corn
salt and freshly ground pepper, to taste
a couple of sprigs of fresh thyme, for garnish

Maybe it’s because I have lived without a proper food processor for, gosh, about five years now, but it rarely ever occurs to me to use a mini chopper or the mixie’s chopper blade, or anything other than my chef’s knife to chop vegetables. I like using my knife, even though my knife skills are not superior. But I wanted to test out the new Multiquick, so its chopping attachment got a little workout tonight.

It chopped the leek:

And the carrot, celeriac, chili pepper, and garlic:

Meanwhile, I heated up a Dutch oven (or large soup pot) and added a little olive oil. When the oil was hot I added all of the above …

… and sauteed until soft.

Then I added the broth, potatoes, and kale.

And the optional “bacon” bits.

Then I covered and cooked for half an hour, or until potatoes were very soft.

Blend to desired consistency with an immersion blender (or cool and puree in batches in a regular blender).

Add the creamed corn. I only had one can (and despite frantically searching for some frozen corn, which I usually have stocked in the freezer, I found no more), and the soup was definitely a success, but I wanted to add more. Season to taste with salt and pepper. Garnish with the fresh thyme.

Some food bloggers label their recipes as “kid-friendly” when their kids particularly like a recipe. If I were to invent a “Mark-friendly” label, this soup would definitely win the prestige. He polished off two bowls and complimented it profusely the entire time. I served it with a tossed salad made with a ton of baby spinach, which he also gobbled up. And that’s how I got two servings of leafy green vegetables – and a host of other veggies – into Mark in one sitting!

This made about 5 servings: I had one, Mark had two, I packed one for lunch tomorrow, and there is another one leftover.

Zaru Soba

I’ve always wanted to try fresh shiso (a.k.a. perilla, a.k.a. beefsteak plant), the Japanese herb variously described as minty and basil-y. For a while, I seemed to keep coming across recipes that called for it. Unfortunately, it is one of the few things I’ve never seen at Super H, or elsewhere around here. So I bought seeds and tried to grow them. Twice they didn’t even bother sprouting. Then I went to San Francisco and enviously looked at the fresh shiso in the Japantown grocery. I almost bought it just to taste it, but I thought eating it plain and by itself would be pretty weird, so I instead bought yet more seeds from Soko Hardware. Those seeds did sprout, however, they didn’t grow more than an inch tall before dying. So I was very excited to come across both green and red shiso plants at the nearby herb store this spring. And weirdly, my shiso plants are just about the happiest plants I have right now! I realized, though, that I’d better get to eating them before I kill them.

Of course, now that I’m ready to harvest them, I have no idea what all those wonderful shiso-inspired dishes were. And since I’m not that familiar with the taste, I’m not able to dream up my own concoctions. So after considering this conundrum for quite a while tonight, I eventually decided to just make zaru soba topped with a lot of shredded shiso, to familiarize myself with the taste.

Soba are Japanese buckwheat noodles, often served cold (really, room temperature, I believe) in the summer with a dipping sauce. For the dipping sauce I would need dashi. Usually for dashi, I just soak some kombu into water for a while.

Sometimes in addition to kombu, dried shiitakes are suggested for vegan dashi.

I may be the only vegan on the planet, other than my husband, who hates mushrooms. At least it seems that way. But every now and then I’ll get brave and try something mushroom-related. Soaking a dried shiitake in my dashi seemed pretty innocuous, although I will not be attempting to eat that nasty thing after it’s served its purpose.

You can simply soak the kombu and optional shiitake in room temperature water for several hours or overnight. I use a kombu piece about 4″ square per 4 cups of water. I was in a hurry tonight, so instead of soaking, I simmered it gently for about 20 minutes, then removed the kombu and shiitake.

The resulting dashi can be stored in the refrigerator for about three days, or frozen.

Zaru Soba

1 bundle (about 3.5 ounces) soba per serving

Dipping sauce (tsuyu) (makes enough for 2-3 servings):
1 cup dashi
2 Tbsp dark soy sauce
2 Tbsp light soy sauce
2 Tbsp mirin
a couple of drops of stevia (or 1 tsp of sugar)

Toppings (choose any or all):
chopped scallions
toasted sesame seeds
shredded or torn nori
chiffonaded fresh shiso leaves
wasabi
shichimi (Japanese 7-spice powder)
grated ginger

Cook the soba until al dente, being very careful not to overcook. Rinse under cold water very thoroughly, washing and rubbing it between your hands to remove any starch.

The “zaru” in zaru soba refers to the bamboo serving dish or basket the cold noodles are usually served on. If you have one, neatly arrange one serving of noodles on each zaru, otherwise use a pretty plate. I’m always interested in plating my meals in an attractive manner, even when only serving myself, but it seems particularly imperative with Japanese foods. So pick something nice! Sprinkle the soba with a few sesame seeds and top with some of the shredded shiso and/or nori. Set aside.

Whisk together the sauce ingredients; taste and adjust accordingly to your preference.

Place about 1/2 cup into each individual dipping bowl.

Place each of the toppings on individual serving dishes. Each diner adds the individual toppings to their dipping sauce or noodles, then dips a chopstick full of noodles at a time into the sauce.

One thing I did learn tonight that I didn’t realize before, is that the “sesame leaves” sold in the produce department at Super H are really Korean shiso! They look a little different – are flatter and darker in color – although it may be that what they have are just not as fresh as my living plant. They sell them shrink-wrapped on styrofoam so it’s hard to tell and I never really knew what to make of them.

Kimchi

Mark’s parents lived in Korea for a couple of years just before he was born so it is no surprise that it is through him and his family that I first fell in love with Korean food. When Mark and I were living in Baltimore and his parents were an hour north of us, near the Delaware border, we’d often meet at a Korean restaurant halfway between us. Now that Mark’s family has moved to Charleston, SC (where there are apparently no Asian grocery stores, a fact I find perplexing and upsetting), we live in a part of Northern Virginia that has a huge number of Korean restaurants and grocery stores, which I find reassuring and great. I honestly don’t think I can live further than 10 minutes from a Korean grocery store.

I will soon have to put up a tutorial on my favorite Korean dish, dolsot bibimbap, but today I bring you instructions on making a food even more important: the ubiquitous kimchi. Kimchi is often, but not always, made with fish sauce. Although cabbage kimchi is the best-known in America, there are many different kinds, including radish and cucumber kimchi. I usually stick to making cabbage kimchi, although I think I may start branching out. The mysterious ingredient I posted earlier in the week was Korean chili pepper flakes.

Kimchi originated when Koreans of long ago – as many as 3,000 years ago – learned how to ferment vegetables to in order to prolong storage time. Special pots of the prepared vegetables would be buried underground to regulate the temperature (thus controling the rate of fermentation), a marker placed in the ground to facilitate location of them after snowfalls. Many modern Koreans have special kimchi refrigerators instead: they sell them at Super H, one of my favorite haunts, for hundreds of dollars. You absolutely do not need a special refrigerator or even pot to make kimchi. I bought a kimchi pot when Mark was going through one of his kimchi phases: he’d eat bowls-full at a time morning, noon, and night and even a gallon-sized jar didn’t hold a week’s worth of kimchi. Before I bought the kimchi pot, I used a huge gallon-sized pickle jar that I recycled during Mark’s earlier dill pickle phase. If you have something like that, great. If not, you can use four quart-sized jars instead, and then you can share a jar or two with a friend if you don’t happen to eat as much kimchi as we do.

Kimchi

1 head Napa cabbage
1/3 cup kosher salt
1 bundle mustard greens (optional)
1 daikon, shredded (optional)
1 large or two medium carrots, shredded (optional)
1 bunch scallions, cut into 1″ pieces
1 head garlic, pressed or minced (I recommend pressing in order to exude the juices)
1 thumb-sized piece of ginger, grated on a microplane grater or minced
1/2 cup Korean chili pepper: go out of your way to find Korean chili pepper as it tastes different than others, but you can use either flakes, coarse, or fine
1/4 cup soy sauce

Remove any unappetizing-looking outer layers from the cabbage, then cut it in half.

Remove the core from each half.

It happens that the prepared kimchi I find that is fish-free is often “whole cabbage” kimchi, which means I have to cut it into bite-sized pieces before serving, which irritates me. So I find one of the benefits of making my own is I can cut it to size before it’s marinated. Although you have to do some preparatory chopping, you also save yourself time later when you can just stir the marinade into the chopped cabbage instead of painstakingly coating each cabbage leaf with it. So I therefore cut each half into half again so I have quarters.

Then I cut each quarter into bite-sized pieces. Place a sieve into the kitchen sink (or a large bowl if you need to keep your sink free) and put the chopped cabbage in it as you go along. Periodically sprinkle some of the kosher salt over the cabbage pieces and toss thoroughly.

Most techniques I’ve seen instruct you to soak the cabbage in salted water for one to four hours, however, I like the technique I saw in this article (although I don’t particularly care for the rest of the recipe): place a weight on the rinsed, salted cabbage and wait 24-48 hours. It takes longer, but you end up with nice crisp, dry cabbage. As the article suggested, I use a large Ziploc bag filled with water:

Meanwhile, make the paste. Take the mustard greens, if using, …

… and chop.

Grate the carrot, if using …

… as well as the daikon.

Then take your scallions …

… and chop into 1″ pieces. I start off shorter at the white part and make larger lengths as I get to the tips.

Press or mince the garlic:

And grate the ginger. Place all of these ingredients into a large bowl.

Measure the chili flakes …

… and add to the bowl along with the soy sauce. Mix everything together.

Place into a jar until the cabbage is ready.

When the cabbage is ready, place it into your kimchi pot, a gallon-sized jar, or if you are using four quart jars, a large bowl (it’ll be easier to mix everything together at one time and then divide amongst the jars). Then add your paste ingredients.

Mix everything up very well.

Divide amongst the four jars if using quart jars. If using any type of jar with a lid that screws tightly, be careful not to pack the kimchi in too tightly, and leave some room at the top of the jar. It may bubble up as it ferments. I once filled a jar too full and woke up in one morning to find kimchi juice spilling all over my kitchen counter. Which is another reason I talked myself into buying a kimchi pot.

Set the jar or pot aside for a few days. I generally give it three days. It will look like this when it’s ready:

If you used a pot, transfer to clean jars. Otherwise, simply move your jars to the refrigerator.

I keep reading that kimchi is good for about 3 weeks, and after that it becomes too strong and you’ll only want to use it in soups and other cooked dishes, but I haven’t really found that to be the case. Of course, we both really like kimchi, so maybe the stronger taste doesn’t bother us. Frankly, I have a hard time keeping kimchi around for three weeks because Mark turns into a kimchi monster. I do make a lot of kimchi ramen though. You can also eat the kimchi before it ferments, although it will really be more a salad in its pre-fermented state.

Serve with anything. Particularly Korean food.

My mother-in-law said my kimchi is very good, and as her time living there qualifies her as an expert on the matter in my opinion, I was very flattered. Of course, my mother-in-law is the greatest mother-in-law ever and tells me everything I cook is very good, which can’t possibly be true, so you’ll have to make it for yourself and form your own opinion. Mark really does eat it by the bowl-full, though, so it can’t be too bad. (He’s also never gotten bird flu. Coincidence? I think not.)

On the subject of fermenting things, in bread baking, there is a technique in which you use a pâte fermentée, which is a starter dough that ferments for a few days before the rest of the dough is prepared. Because it seems I am always fermenting something, be it kimchi or bread or whatever else, I suggested to my friends that Renae Fermentée might be a good nickname for me. However, like Rimmer from Red Dwarf, I found that people don’t usually glom onto nicknames you choose for yourself, and the friends seem to be sticking with a resurrected nickname that was bestowed upon me in high school: Rogna Pasta. Which is fine. At least I’m not Ace-hole. But I still think that if I ever record an album, I’ll use the stage name Renae Fermentée.

Sun-dried Tomato Pesto

I am still extremely busy. I got home late from work (although much earlier than my close-to-midnight arrival last night) tonight, so something fast was in order. I’d bought a couple of bunches of basil a few days ago, thinking I would make pesto, and at some point between then and now, I’d thought it would be fun to use sun-dried tomatoes in the pesto, which is exactly what I did. I’m skeptical about calling this “my” recipe because it’s a pretty standard pesto and adding sun-dried tomatoes is certainly not novel, but I’m suffering from lack of posts lately, so I’m putting it up anyway! Toss this with pasta and you can have a meal ready in the time it takes to cook the pasta.

Sun-dried Tomato Pesto

2 cups basil leaves
1/2 cup sun-dried tomatoes, reconstituted in hot water (if using oil-packed, cut back on the olive oil a bit)
1/4 cup pine nuts
1/4 cup olive oil
2 Tbsp nutritional yeast
4 cloves garlic
1/2 tsp salt

Soak the sun-dried tomatoes in hot water until soft (5 minutes or so):

Place all ingredients in a blender.

Blend until smooth.

To serve with pasta as I did, place pasta into a bowl, put a heaping tablespoon-sized dollop of pesto upon it, and dribble a little of the pasta-cooking water over it (I scooped some out with a Pyrex measuring cup before dumping into the colander), then stir everything together.

With a glass of much-deserved wine, this was a very fast but elegant way to wind down. I encountered a lot of interference on the way, though, I must confess. See, Tigger LOVES nutritional yeast; if I so much as go near it, he sinks his claws into my arm and drags me closer to him, head-butting me and meowing. So when I wanted to take a picture of it, he, of course, had to involve himself.

But I don’t know, there are worse ways to end a day than in the company of Rushdie, Brachtune, and a big glass of wine, so I won’t complain.

And the pesto must have been good because I caught Mark dipping the extra tomato wedges into the leftover pesto after cleaning his bowl!

Tempeh Reubens

Back when we lived in Baltimore, our favorite bar was Club Charles (affectionately known as Club Chuck), the world’s best dive bar, frequented by John Waters and quintessentially Baltimore. When the owner of Club Chuck bought the building next to Club Chuck and turned it into a vegan-friendly restaurant called the Zodiac, I was deliriously happy. The Zodiac used to have really cheap, really good food, including a tempeh reuben that I loved. Then a new chef came in and suddenly the reuben was gone from the menu, never to return, and the prices about doubled on everything else. We still go to the Zodiac when we need something late at night and are planning to hit the Chuck anyway, but I usually grumble about missing the good old cheap tempeh reuben days.

Fortunately I then discovered the vegan reubens at Liquid Earth, a cute little juice bar and restaurant in Fells Point. I generally scarf down two entire reubens whenever I’m in the city. I think the reuben on the menu is not vegan, but you can ask for a vegan version. I’ve heard the Liquid Earth vegan reuben even made an appearance on Homicide once, but I never saw the show. The Liquid Earth vegan reuben, although absolutely delicious, is not a tempeh reuben. When I haven’t been to Baltimore in a while and am in need of a reuben, however, I make tempeh reubens at home.

I should confess I’ve never actually eaten a “real” reuben, so I can’t compare the taste. But I don’t know what’s not to love about rye bread, sauerkraut, and tempeh. And today when I was wondering how to showcase my first successful batch of homemade tempeh, either Mark or my visiting best friend, Fortinbras, suggested reubens. Because they are yummy!

First, make the Thousand Island Dressing, because it needs time to chill.

Thousand Island Dressing

1/4 cup ketchup
1/4 cup Vegenaise
2 Tbsp minced shallot or onion
1 Tbsp sweet relish
juice of 1/4 lemon
1/8 tsp dry mustard
1/8 tsp Indian black salt (optional) – I added this because Thousand Island Dressing traditionally contains hard boiled eggs

Mix all of the ingredients together and refrigerate for at least half an hour.

Tempeh Reubens

For two sandwiches,

4 slices rye bread
1/2 package tempeh, sliced in half
1 cup sauerkraut
1/4 cup Thousand Island dressing
2 slices vegan cheese – honestly, the “cheese” is the least interesting part to me and if you can’t find a good brand, you might as well just omit it

By the way, do YOUR cats love to eat plastic? Mine do and it drives me crazy!

If your tempeh is uncooked, steam it for 20 minutes. I do this in a wok:

After steaming the tempeh, heat a skillet or cast iron frying pan up, add a little bit of oil, then fry the tempeh on both sides until slightly brown and crispy:

While the tempeh is frying, set up your sandwiches. Swipe one side of each piece of bread with the dressing, then top one slice with the sliced “cheese” if using and the other with some sauerkraut:

The tempeh will look something like this when ready:

Place on one of the bread slices …

… then grill. I used my George Foreman, but you can also grill them in a pan or under the broiler.

They’re ready when they are golden brown on both sides:

Serve with a pickle on the side and enjoy:

In other news, Fortinbras won Tigger a Scooby Doo doll at the fair last night because he loves Tigger.

That’s as much of that story as you’re getting, I’m afraid. I can tell you, however, that Joan Jett does not give a damn about her bad reputation.

Broccoli “Cheez” Soup

My mother reminded me a couple of years ago that in college I was a big fan of broccoli cheese soup. I recalled that I’d order it for lunch from a restaurant near the record store I worked in and my mother would put cans of the Campbells variety in the care packages she made for me, but my favorite way to enjoy it was in bread bowls at the Renaissance Festival. So I decided to veganize this old favorite, which turned out to be very easy to do and very tasty!

I’ve been making this meal for a couple of years now, but why I chose one of the first days it feels as hot as summer – and Mark’s whining about the heat hasn’t yet turned so insistent that I agree to turn the air conditioning on – to make what is usually cold-weather comfort food, I do not know. But we ate it both Saturday and Sunday for dinner and Mark was disappointed when there were no seconds available on Sunday, so even if you live in a climate that’s currently turning to summer, don’t be disinclined to try it. Even if you want to serve it in bread bowls as I did and baking bread heats up your kitchen to some hellish temperature.

Broccoli Cheez Soup

1 large onion, chopped
4 cups vegetable stock or vegan “chicken” broth (I’ve used the “chicken” stock here despite the fact that it used to really piss me off when restaurants would use chicken stock in an otherwise vegetarian soup)
2 small or 1 large head of broccoli
1/2 recipe pimiento cheez

Chop the broccoli, including the stems. You don’t need to be neat about separating the florets because most of them will be pureed. Heat a large pot on medium heat, then warm a little bit of oil and add the onions.

Saute the onions until begining to turn brown.

(Mine look extra brown in places because it was at this time when I discovered I couldn’t reach my server and I was away from the kitchen for longer than I’d anticipated.)

Add the broccoli and the broth or stock.

Turn the heat down to medium-low, cover, and simmer for 20 minutes or until broccoli is very soft. Add the cheez.

Heat for 5 more minutes or until cheez is melted.

Puree, making it as smooth or chunky as you like.

As I’ve mentioned before, an immersion blender is great for this type of thing, however, if you are considering buying one, do NOT under any circumstances buy the Cuisinart CSB-77 Smart Stick Hand Blender. I have gone through TWO of them. They both worked for about 3 uses, then the blade stopped turning (the motor sounds fine). I can see what the problem is (two pieces of metal are not making contact as they should), but both of them had the same problem and neither one lasted a month. (If anyone wants to recommend another brand, please do so!)

If you don’t have an immersion blender, like me, suddenly, let the soup cool down before pureeing in batches in a blender or food processor. I know I stress this repeatedly, but do not put hot liquids into a blender, and even when blending warm liquids, fill the blender only half full. I pureed three batches and left a fourth un-pureed so I’d have some bits of broccoli floating around.

Serve in bread bowls.

Note: if you make a full batch of the pimiento cheez, one suggestion I have for the leftover cheez is to use it in a burrito, as I did for lunch today. I mashed up a can of pinto beans, added some of the leftover pimiento cheez and some salsa, and microwaved it for about 3 minutes. Roll up in a tortilla with chopped onions, leftover rice if you have any, and some hot sauce. Super-fast burrito!

Bread Bowls – for soup or dips

Bread Bowls

I often use any bread recipe I’m into at the moment shaped into smaller loaves, but this time I made a bread bowl-specific recipe, which I found on The Fresh Loaf. The person who made the post says the recipe was “originally from KA”, which to bakers means King Arthur Flour. I substituted a cup of white whole wheat flour for one of the cups of all-purpose flour, which you don’t have to do.

3 cups unbleached all-purpose flour (I used 2 cups all-purpose and 1 cup white whole wheat)
1 cup semolina
2 1/4 tsp instant yeast (this is the amount contained in one packet, if you buy your yeast that way)
1 Tbsp non-diastatic malt OR 2 tsp sugar
1 1/2 tsp salt
1 1/2 cups water

Mix together all of the ingredients except the water, then add the water and mix until it forms a ball.

You can knead this by hand if you like, although I use a stand mixer. It will start off looking shaggy, then start to look smooth and supple:

… lightly mist a bowl with oil and put the dough into it:

Then put it somewhere warm to rise. I don’t get too worked up about the temperature when I’m letting dough rise, although I do put it in the warmest place in the house, which in this case was a sunny window:

Let the dough rise until it is doubled. How long this will take will depend on the temperature of the room; it will usually take 1 to 1 1/2 hours. It will then look like this:

The original recipe said to divide the dough into 5 pieces to make 5 “large” bread bowls, but not only is 5 an uneven number for my household of two, I was damn sure that wasn’t going to make 5 “large” bread bowls. I therefore weighed it …

… divided the weight by four, and then created four small rounds of equal weight. Place the four balls onto a sheet pan lined with parchment (I re-use parchment, which is why it looks dirty), or lightly oiled.

Cover lightly with a clean towel and place in a warm place to proof. Preheat the oven to 425 degrees Fahrenheit. I usually proof my dough on top of the stove when I’m preheating the oven; it gets really warm there (sometimes too warm, in which case I put it next to the stovetop instead of on it). Allow the rounds to almost double, then remove the towel and let them finish their proof out in the open for the last 10-15 minutes, which toughens the surface of the dough.

Spray the rounds heavily with water and bake for 18-22 minutes. (If you are doing 4 instead of 5, you’ll probably be at the longer side of this time.) Turn the oven off and prop the door open a bit and let the loaves sit for 15 minutes, then remove from oven and cool thoroughly on a rack before serving.

To serve, cut a cone shape out of the top, …

… then hollow out the insides (reserving the carved-out parts for dipping, or for another use such as croutons).

I need to remember to put bread items on something more contrasty before taking pictures.

Pimiento Cheez

Being vegan is much easier now than it was just ten years ago. Ten years ago I barely knew how to cook, didn’t know any other vegans, and although I lived near a health food store in Baltimore, I didn’t really know what to do with the stuff I found there. I don’t think food blogs even existed. The internet has been a boon to vegans since then, though: not only are the online resources for vegans themselves immense, but a lot of people who might otherwise never have come across the concept of veganism are exposed to it online, which helps greatly when I, as a vegan, am later exposed to those people. Ten years ago when I told people I was vegan, the response I most often received was, “What’s a vegan?” (followed by an astonished, “But what DO you eat?”) Now I can go into a restaurant and ask if a particular dish is vegan and get an answer – without a puzzled look. A lot of restaurants use the term “vegan” right on their menus these days!

Back in the dark days of my early veganism, the first cookbook I bought was Simply Heavenly!.

As you can see, my copy of this book has been seriously abused. Entire sections of it have come unattached from the spine and there are food and water stains throughout. In particular, the “Dairy Substitutes” chapter is completely removable from the rest of the book due to being opened to that part so frequently, and is also caked in lord only knows what. Although I’ve gone on to purchase countless other vegan cookbooks, I don’t know what my life would have been like if Abbott Burke hadn’t told me early on how to make several varieties of “cheez”, seitan to taste like every meat imaginable, and everything else you can imagine – 1,400 recipes in all. Along the way, I learned to cook. I still consider myself a novice cook, but I’ve certainly progressed from the Spaghetti-Os and cheese sandwiches of my pre-vegan days.

Unfortunately Simply Heavenly! is long out of print – and used copies go for a pretty penny – which is why I will be sharing the following recipe with you. This “cheez” will be used in another recipe I will be providing later today or tomorrow, but I’ll give it its own post. The text below is from the cookbook.

Pimiento Cheez 2

This Cheez should not be grainy from the ground (blended) cashews. If this happens to yours, then you did not blend long enough or your blender lacks the power to do the job. We use a Vita-Mix, and it works perfectly. (Renae’s note: I use a Sumeet Asia Kitchen Machine, my undying love for which I’ll be discussing at some point.)

1/4 cup agar
1 cup water
3/4 cup cashews
1/4 cup pimientos
1 1/4 tsp salt
1 tsp onion powder
2 Tbsp sesame seeds
3 Tbsp nutritional yeast
dash garlic powder
dash dill seed
1/2 tsp corn oil
2 Tbsp lemon juice

Soak the agar in water about 5 minutes …

… and boil gently until clear.

Place the other ingredients, except the oil and lemon juice, in a blender …

… with the agar and whirl. Slowly add the oil. Add the lemon juice last.

Pour immediately into a mold and set in the refrigerator to cool.

The cookbook doesn’t provide an estimate of how long it will take to firm up, but it doesn’t take long, perhaps as little as 15 minutes. Mine doesn’t look too pretty unmolded because I was planning to just shred it up anyway, so I wasn’t too careful about smoothing it out.

You know it’s good because Tigger only sits on cookbooks of which he approves!

(That’s a total lie. Tigger is completely non-discerning about he sits on.)
