Seven Posts

I’m still here! Yes, I survived the earthquake (pretty strong here in Northern Virginia, but I thought it was fun), the hurricane (not strong at all in NoVA, in fact, I was almost disappointed it wasn’t more exciting until a co-worker in Vermont started sending me pictures from there, then I felt contrite), the floods, the downed trees, etc, etc. etc. My lack of posts is not related to any of that, though, it’s the same old thing it’s been most of the summer: I AM SO BUSY!

As I’ve alluded to, and which you can tell from the multitude of raccoon pictures I’ve been posting, I’ve spent most of the summer getting into wildlife rehabilitation. I received a comment recently from someone who was also interested in raccoon rehabbing but didn’t seem sure if she could do it, so I figured I’d say a little about my experience so far. Wildlife rehabbing is something I’ve considering doing for years, but although I’m known among my friends as being very practical, down-to-earth, and capable (at least I think I am known that way!), one of my major weaknesses is a sensitivity about both animals and medical stuff. By medical stuff, I mean, I come very near to passing out if I have blood drawn or watch it being done to someone (or some animal) else, and if I think I have some ailment, like the time I had plantar fasciitis, I have to make my mother research it for me because reading about anatomy makes me sick. So for a long time I’ve told myself there was no way I could get into animal rehabbing because as soon as I encountered an injured animal, I’d either burst into hysterical tears or be paralyzed with horror.

But then I decided I didn’t want to be someone who loves wildlife so much she can’t help them. It doesn’t make sense. My decision to become a (for now) apprentice rehabber was not just to benefit wildlife, but to benefit me. To become a better person. To fix something about myself I can be better at. To overcome my fears. Parts of this summer have been hard, really hard. Harder than I was hoping my first year would be. Much of it has been exactly what I expected it to be: I clean up raccoon poop; it’s not glamorous. But parts of what I’ve been doing – in addition to helping with the raccoons, I’ve been transporting animals for our local wildlife rescue group – have been beneficial in unexpected ways. Not only have realized I’m not paralyzed by upsetting situations, but I’ve been talking to a lot of rehabbers and I’ve found it easy. See, I’m extremely shy. I may not seem like it within the context of my blog, because it’s my blog, but I find it difficult to talk to strangers. Somewhat to my surprise, I have found I really enjoy talking to all the people I meet, and I’ve been asking questions of everyone to learn everything I can. I had/have a bad view of Northern Virginia; there are a lot of things about this area that don’t sit well with me: McMansions, materialism, self-absorption. My perception has changed a lot as I meet more and more compassionate people and learn more and more about the wildlife population here. There are a lot of good people here after all!

So, Jill, if you are reading this: if you want to work with raccoons or any wildlife, don’t sell yourself short! I haven’t had to insert any feeding tubes and if I do, I’ll probably freak out the first time, but I know now I can handle it if I tell myself I can handle it. And for those of you who are interested in wildlife but aren’t sure the hands-on stuff is for you, contact your local wildlife organization: there are a lot of other things out there that are easy to do (driving animals in boxes around is not hard work!) but are so helpful and rewarding.

Alright, that’s the end of my public service announcement for the day. This IS a food blog, right? Where is the food, you are no doubt asking. Unfortunately, there is no food. I’ve wanted to post, and I’ve even snapped a few half-hearted shots of some of my meals, but honestly, in addition to not having time to blog, I just haven’t made anything blog-worthy to tell you about. However, weeks ago, Jes tagged me in a Seven Links post, which I figured would give me something to write about, but I never found the time to sit down and do it. I don’t really have the time today, but I’m making the time. So essentially, I am supposed to link to seven archived posts in seven different categories. It’s harder than it seems, but in the hopes that at least some of my archives are more interesting than I am lately, here we go:

Most Beautiful Post

At first I thought this one would be next to impossible to choose, because what is “beautiful” about my blog, other than food in general being beautiful? But then I realized that although it’s sort of cheating because they were just about the most off-topic posts I have made, the answer is easy. I have to select two, though, because there is no way to choose between them.

Curiously, this one should be very simple to answer just based on statistics, but the truth is I don’t look at my logs that often; at least not lately because I’ve been so busy. Whenever I do look at my logs, I’m always surprised by how many hits Thai Sticky Rices and Sauces gets; a lot of people come in via googling for sauces for sticky rice. But as far as getting continuing feedback, I think the bread bag tutorial may be the most popular.

Most Controversial Post

Okay, this is the hardest one! Have I ever done an even remotely controversial post?! Believe me, the fact that I haven’t is not because don’t hold controversial opinions or do controversial things, because a large contingent of the planet would probably think I do. But the goal of this blog is to attract not only like-minded vegans, but friendly omnivores. I don’t want controversy here. I want love, peace, and happiness here like the damn hippie I am! This is a food blog (regardless how hard I try to make it a cat and raccoon blog), and I want food to be the great unifier, not the great divider.

I honestly can’t think of a controversial post, but there is one that some random person on the internet has left a nasty comment on a couple of times, and I’ve deleted the comment both times. That’s as close as I think I’ve gotten to controversy. It was one of the old posts with Tigger and this person left a comment about how she wouldn’t ever eat at my house because I let my cats on the counter. I don’t remember which post it was because Tigger was ALWAYS on the counters, but bizarrely, she’s left the same comment twice over a span of like two years. Both times I was undecided about allowing the comment and then replying, “that’s fine because I would never invite someone as rude as you to eat in my house”, or just deleting it. I would never delete a comment made by someone who respectfully disagreed with me, and I’ve allowed other less-than-friendly comments, but I just felt that particular comment was nothing but mean-spirited and meant to hurt my feelings, and it goes against everything I want this blog to be for me and others. I know a lot of people on the internet are into sparring with each other, but I just didn’t want to be reminded of that negativity every time I looked at that post. So I guess my big controversy is I controversially deleted the single mean comment I’ve ever gotten, so none of you even knew there was a controversy. If any of you remember a better controversy, comment and tell me! I won’t delete your comment! (Unless you hate on Tigger, of course.)

Most Helpful Post

I don’t know how “helpful” I usually am; sometimes I think I’m the opposite of helpful because I’m really very relaxed about cooking: I don’t measure things, so I sometimes wonder how useful my recipes are when they are usually just estimations and approximations of what I did. And I am not really a pioneer of any techniques or even flavors. But if I have to pick a post, I would say the tofu press tutorial, just because sturdy tofu presses are hard to find and I haven’t seen any posts like that one.

A Post Whose Success Surprised Me

I’d expect a post with “A-Not-Very-Good Attempt” in the title to fall pretty flat, but I was surprised by how many people commented on my kitchen in my “not-very-good” attempt at seitan ham. Since then I’ve noticed I always get a lot of comments whenever I post photos that show more of my kitchen (which has gotten even better since that post!) than just the food I’m working on. We live in a rental house and the kitchen, although adequate, is nothing special. However, someone I had just met pointed out to me at a party once that my kitchen is obviously the kitchen of someone who loves to cook and that was why she (and everyone else) likes being in it. And it’s true, *I* like being in it, and I guess that vibe transcends to others.

A Post I Didn’t Feel Received the Attention It Deserved

Hm, this is really hard to answer because I’m always flattered by any attention my posts get, and I have a lot of great commenters that keep me going! The only one that comes to mind is maybe the kaiser roll post, just because I don’t think anyone made them (other than those who already have and love The Bread Baker’s Apprentice, which the recipe is from) and they are GREAT. Now, my high school hair in that post, on the other hand, got way more attention than it needed!

The Post I’m Most Proud Of

This is hard, too, but I think I’m going to go with my three miso posts because, well, I made miso. I wasn’t formerly known as a particularly patient person, but fermentation, especially of miso, has taught me the way. I am proud that when I want to know how something is made, I MAKE it.

Wow, that took way longer than I hoped it would! Thanks for making me do it, though, Jes! I’m supposed to tag other people, but honestly, that sort of stresses me out and I’m stressed out enough with work right now, so if I’ve inspired anyone else to go through their archives, I’d love to read your seven posts, but please don’t make me call on people.

I hope to be posting much more frequently this fall as things calm down both at work and with the wildlife. Although I haven’t come up with any blog-worthy posts yet, I am doing a few new things I’ll eventually be posting about: making red wine vinegar, making beer(!!!), and I got a CO2 tank so I’ve been carbonating everything – expect soda recipes galore this fall!

Rice Noodle Salad

Summer is waning, I’m sorry to say. Instead of a blast of already-100-degree heat on my face when I leave for work in the mornings, it’s pleasant, even cool sometimes. It’s a bittersweet time of year because although it’s nice to have a relief from the oppressive heat, I hate to see summer end. Fortunately (or not), it’s usually still quite warm to hot during the day, especially when you are cleaning raccoon enclosures. So last night’s dinner was still a welcome almost-no-cook treat.

Rice Noodle Salad

1 package rice noodles – I used wide ones, but thinner ones would work too
1 huge or 3 smaller carrots, cut on a spiralizer or julienned
1 small daikon, cut on a spiralizer or julienned
1 cucumber, cut on a spiralizer or julienned
2 cups bean sprouts
1/2 small head Savoy (or about 2 cups Napa) cabbage, shredded
2-3 scallions, thinly sliced on the diagonal
1/2 cup peanuts, crushed

For the dressing
3 Tbsp rice vinegar
3 Tbsp soy sauce
2 Tbsp brown sugar
juice of 1 lime
1 red chili pepper, minced

If you really don’t want to cook anything, soak the noodles in very hot water. I’m too impatient to do that and always boil mine for a couple of minutes. When they are al dente, drain them, rinse under cold water, and toss with some toasted sesame oil. Set aside.

Meanwhile, prep all of the vegetables. Whisk together all of the sauce ingredients. Then toss everything together except the peanuts and scallions. I used my hands to mix everything together before realizing that was a really stupid move considering I used a jolokia pepper in the sauce, but for some reason, it didn’t burn. (I’m not convinced what this farmer is selling to Whole Foods as jolokia peppers are really jolokias; they’re not that hot.)

Top with crushed peanuts and scallions. Serve with sriracha.

I also served tofu puffs with a sweet chili-vinegar dipping sauce. Super H sells these tofu puffs, which Mark loves:

I cut them in half and toast them in the toaster oven for one to two toast cycles to warm them up and make them slightly crispy outside:

I make a dipping sauce for them based on a recipe I got off the internet many, many years ago, back when I actually owned one of those evil appliances called a printer and used to print out recipes and store them in a huge, untamed notebook. I think I lost the printout so I can’t tell you where I got the recipe (I think a Thai recipe site) or if I’m even still making it as directed.

Sweet Chili-Vinegar Dipping Sauce

3 Tbsp rice vinegar
1 Tbsp brown sugar
1 Tbsp chili-garlic sauce
1 clove garlic, minced or pressed
pinch of salt

Whisk everything together.

Serve with the warmed tofu puffs.

Now, about those raccoons. They’re often asleep when I arrive to clean their enclosure.

You learn very quickly to NEVER put ANYTHING you don’t want mutilated within reach of a raccoon. They are extremely devious! Here is one on its back destroying a paper towel I made the mistake of putting down for half a second.

But seriously, how could you possibly be mad at this face?

Australian Avocado Pizza

I HAVE BEEN SO BUSY! I’ve been feeling bad about not posting, but yesterday I looked in my book database and realized it took me two weeks to read the last book I finished. That’s crazy! Usually I finish a book in two days. So believe me, I’m not being negligent because I don’t care about you. It’s just been an insanely busy summer.

In exciting news, Smuckalert is here! I told him I would make pizza Saturday night, so while the oven was pre-heating I asked him what he wanted on his pizza, and he asked me a strange question: “is it tomato- [read: to-mAH-to] based or avocado-based?” Whaaaat? In what country is the default pizza not assumed to be made with tomato sauce? Actually, I’m pretty sure the default in Australia IS tomato sauce, but Smucks assures me that “chicken avocado” is a normal pizza over there. I’ve ordered pizza in Australia and I don’t remember any such thing, but there is the fact that I would likely completely ignore a “chicken” anything pizza on a menu. My response Saturday night was, “I don’t have any avocados and I don’t know what the hell an avocado-based pizza is, so what do you want on your tomato pizza?” But I like to please Smucky and I was intrigued by this avocado pizza, so I decided it was perfectly okay to make pizza twice in three days and dragged Smucky to Wegmans this afternoon to stock up on avocados. Usually avocado-anything is “California-style” (and believe me, it’s appropriate), but I’m calling this Australian pizza because I really do think it’s mostly an Australian thing. The ingredients for this were mostly dictated by Smucks, so it’s also Smucky’s pizza.

Avocado Pizza

pizza dough – the ingredient amounts listed below are about enough for 2-3 large individual pizzas
2 ripe avocados, peeled, pitted, and chopped
3-4 cloves garlic, minced or pressed
juice of 1 lime
4 frozen teaspoon-sized cubes of cilantro (Trader Joe’s sells this), or about a handful fresh, chopped
1/2 – 1 tsp salt
your favorite vegan “chicken” – I highly recommend Gardein – chopped into bite-sized pieces
thinly sliced onion
thinly sliced tomatoes
thinly sliced jalapenos
vegan mozzarella

If using frozen dough, remove from the freezer 1-3 days in advance, and from the refrigerator 1-2 hours before baking. Preheat the oven as high as it will go an hour before bake time.

Slice the avocados in half, peel and pit them, and roughly chop them, then place it in a food processor or blender.

Place the cilantro, garlic, and lime juice in the food processor or blender as well and blend until smooth. Add some water to thin so it’s a bit more spreadable than guacamole, then add salt to taste. Blend very well. Place in a bowl just big enough to contain it and cover it to keep it from oxidizing and turning brown.

Defrost the “chicken” enough to chop (if necessary) and chop into bite-sized pieces. Thinly slice the onions. Slice and chop the tomatoes.

Thinly slice the jalapenos.

Sprinkle some flour on your workspace and shape or roll out your dough, then transfer to a semolina- or cornmeal-dusted pizza peel. Spread a nice layer of avocado puree on the crust.

Top with the jalapenos, tomatoes, and onions.

Add the “chicken”.

Sprinkle with the “cheese”. I also like to dust it with Dragonfly’s Bulk, Dry Uncheese Mix, which I keep in a shaker.

Bake until crust is browned and “cheese” is melty.

Serve hot.

Cut with scissors because it’s the awesome thing to do.

Smucky has come a long way. When I met him nearly 10 years ago, he never would have been this happy about eating vegan food. I let him keep deli turkey and mozzarella slices in the fridge when he stays here, but when I asked him if he was going to put real cheese and chicken on his pizza, he said no, vegan was fine! He said he was a bit nervous about the “chicken”, but after trying it thought it was pretty good. That’s why I recommended Gardein. Every non-vegan I’ve given it to has really liked it, and I’m typically extremely wary of giving fake meat to non-vegetarians.

Smucks devoured his pizza and then helped me with mine…although he was rather displeased about the jalapenos on mine (I left them off of his).

Sometimes I worry I’m going to have to have Smucky’s laptops surgically removed from his face, but I insist on technology-free dinners. I try to extend the conversation after the meal for as long as I can before the boys return to their computers. Here is Smucky after dinner looking very deceptively cute…he’s actually being very evil. BUT I CAN’T TELL YOU WHY.

I worked from home today so I could keep Smucky company. I’m extremely busy at work these days and was quite wrapped up in it, but I did end up having to take a few pictures of the cats, busy as I was.

Chana Masala

Life’s been hectic! I constantly feel as if there are not enough hours in the day, even on weekends. Especially on weekends. I’m busy at work and in my personal life. Work intruded upon personal life this evening when I got home late. Waiting for me was an unhungry Smark, who confessed he’d filled up on tomato sandwiches all day. (We love tomato season in this household!) When Mark is not hungry or eating elsewhere, that ordinarily means Indian food, yay! But I was hungry and it was late, so I didn’t want to spend a long time making some authentic, perfectly spiced, slow cooked meal just for myself. What I did want to do, however, was use up the cooked chickpeas I had in the refrigerator, so I decided to make an easy, low-stress chana masala, which is Fortinbras’ favorite Indian meal. The “easy” part is that I didn’t measure any of the spices, although I’ve tried to estimate the amounts. Interestingly, midway through my meal, Mark showed up exclaiming, “that smells good; can I have some?” He then proceeded to have two servings, which he does every time I make Indian food. So how he can go around saying he doesn’t like Indian food is beyond me. Anyway, here’s what I did:

Chana Masala

3/4 tsp mustard seeds
1/2 tsp fenugreek seeds
1 tsp cumin seeds
1 tsp asafoetida (this doesn’t usually go in channa masala, but I love the taste and even the smell of it; you can omit it)
4 cloves garlic, minced or pressed
1 small onion, chopped
1 tsp turmeric
1/2 tsp (or to taste) cayenne pepper
1 14.5 oz can diced tomatoes
2 Tbsp tomato paste
1 Tbsp amchoor (dried mango powder; can substitute lemon juice, which you would add at the end of the cooking time)
1 tsp garam masala
1 tsp paprika
1 tsp ground ginger (I was too lazy to use fresh, which I would ordinarily do)
1 tsp (or to taste) salt
4 cups cooked chickpeas
1/2 cup frozen peas, optional (I like to have at least a bit of green in everything I make)

Heat some oil in a pot, like a Dutch oven, over medium high heat. Add the mustard seeds and cook until they begin to pop, then turn the heat down and add the fenugreek and cook for a few seconds or so. Then add the cumin seeds, garlic, and asafoetida (if using) and cook about a minute. Next, turn the heat back up a bit and add the onions, turmeric, and cayenne and cook for about 7 or 8 minutes, or until the onions are well-cooked. Add the tomatoes, tomato paste, amchoor, garam masala, paprika, ginger, and salt, and about half a (tomato) can of water. Bring to a boil, then reduce heat and simmer for about 10 minutes or until the tomatoes are starting to break down. Add the chickpeas and cook for about 30 minutes, adding a half-cup or so of water if it gets too dry. Adjust the seasonings. If using, add the peas and cook until they are heated through. If you don’t have amchoor, add some lemon juice for tang.

I served it with roti.

Wow, I feel I’ve posted so infrequently this busy summer that we need to catch up! I made my first batch of beer and it was really good! So good I wish I’d made a lot more than a gallon. I’ve also been baking bread from the spent grains, which I’ve been dying to do ever since Peter Reinhart raved about it in Whole Grain Breads. I tried nagging the few people I know who have made beer before to make some more so I could have the grains, but finally I decided to just make my own damn beer! I can’t wait to make more. Any fellow brewers out there?

I got my copy of Papa Tofu Loves Ethiopian Food and I can’t wait to make everything in it! If I use it half as frequently as I use the original Papa Tofu, it’ll be worth far more than I spent on it. Mark has taken an interest in cooking and been making our Sunday meals for a couple of weeks now, which is nice because I’ve been so busy, especially on Sundays. He kept declining my requests to do a post until he surprised himself with his awesome summer roll-making skills yesterday and announced he may do a post after all. He submitted what he described as “the first chapter” of his upcoming post to me today and all I can say is, um, prepare yourselves. I’m not sure what you should do to prepare yourselves, but you may want to brew your own batch of beer and drink a few before attempting to read Mark’s manifesto theory of the universe science fiction novel recipe for summer rolls. In the meantime, here is his first Sunday meal: nutloaf.

Torticia is fat! She doesn’t overeat, so I’ve been trying to make her exercise more, with varying degrees of success. One thing I do is play “the food game” with them. The rules of this game are I throw pieces of dry food across the floor and they have to run after it and eat it. Their little chomping of each tiny bit of kibble reminds me of Pac-Man. They love this game and demand to play it several times a day. I try to get Tortilla Chip to run up and down the stairs as much as I can.

Blender Lasagna

Want to hear something I personally find completely crazy? Ten years ago today Mark and I went on our first date. It was an epic date, too: he picked me up at noon and I didn’t get home until well after midnight. We’ve been together nearly every day since. Anyway, like most of the country, Northern Virginia is laboring through 100-degree-plus days, with heat indexes as high as 115. Most people probably don’t think “lasagna!” when it’s 110 degrees out, but I do think “lasagna!” when it’s time to make a special meal for Mark. I’ve posted a few lasagna recipes before, but since I hardly ever make things the same way twice, here’s another one. I called it Blender Lasagna because I realized while I was assembling it that I had used the blender for every layer.

Blender Lasagna

no-boil lasagna noodles (I can only recommend Trader Joe’s brand), or regular lasagna noodles, cooked
1 1/2 cup vegan protein, chopped or shredded (like Italian sausage, etc. I used chick’n breasts because I had them to use up)
1/2 onion, chopped
1 small zucchini, chopped
vegan mozzarella, shredded

Tomato Sauce
1 14.5 oz can whole tomatoes
1 14.5 oz can tomato sauce
4-6 cloves garlic, minced or pressed
dried oregano, basil, and red pepper flakes, to taste
salt and freshly-ground black pepper, to taste

Garlic Stem Pesto
enough garlic stems (scapes), chopped, to make a cup (I’ve been looking all over for garlic scapes, and finally discovered the Asian grocery store has had garlic stems all along)
6 Tbsp olive oil
6 Tbsp water
1/4 cup pine nuts
1/4 cup nutritional yeast
2 tsp onion powder
1 tsp salt

Cheezy Sauce
1 package silken tofu
1/4 cup nutritional yeast
dried basil, onion powder, garlic powder, and salt, to taste
fresh lemon juice

Preheat the oven to 375 degrees Fahrenheit, then fire up that blender or food processor! Place the tomatoes and tomato sauce in the blender and puree. Heat a little olive oil in a sauce pot, then add the rest of the sauce ingredients and cook for a minute or two. Add the tomatoes, stir, and simmer gently for 15 minutes.

Rinse out the blender. Put all of the pesto ingredients in it and process until smooth, adding additional water if necessary. Set pesto aside. This makes way more pesto than you probably need for the lasagna. You can halve the recipe or freeze the extra. Or save it for another recipe later in the week.

Rinse out the blender. Put all of the cheezy sauce ingredients in it and process until smooth, adding the lemon juice last. I like mine fairly tangy so I didn’t give an amount for the lemon juice because some people may not like that much. I never measure stuff like this; just taste it and adjust the seasonings until you like it. Set cheezy sauce aside.

Chop onions and zucchini. If you’re using a food processor you could even use that to roughly chop the vegetables. Saute the onion and zucchini in a little olive oil with salt and pepper.

Place a thin layer of tomato sauce in an 8×8 pan and put down a layer of noodles. Smear with pesto. Top with the protein and add some tomato sauce. Put down another layer of noodles, add some tomato sauce, then top with the onion and zucchini mixture. Put down another layer of noodles and cover with the cheezy sauce. Put down the final layer of noodles and cover with the remaining tomato sauce. Cover pan with aluminum foil and place on a cookie sheet. Put in the oven and bake for 30 minutes. Remove the foil, add the mozzarella, and return to the oven. Bake for 15 more minutes then remove from oven and let sit for another 15 minutes.

Blueberry Lemonade

I don’t know when I became the beverage queen, but apparently that’s what I am. In fact, my first batch of homebrew is ready today! (I haven’t tasted it yet; it’s probably going to be terrible!) I don’t usually require fancy drinks: I like orange juice with my breakfast, have green tea as soon as I get to work, drink water with lunch at work, and always have wine with dinner. I also love water and drink it throughout the day. There really isn’t time for me to be drinking anything else. Nonetheless, I’ve become addicted to blueberry lemonade this summer.

I don’t know why I never made lemonade before this year, because I love lemons, and I’ll often order lemonade instead of tea or cola if I’m out. And I always love it when my aunt shows up at the parental homestead with her homemade lemonade. But the idea of juicing all those lemons at once left me daunted. Then a few weeks ago, the grocery store didn’t have any loose lemons for sale and I was forced to choose between buying a whole bag of lemons or not having any lemons at home, and I just can’t go without lemons. I add fresh lemon juice to everything. Basically I was forced into making lemonade. So I bought a contraption: the JUICE-O-MAT! I must confess I’d been looking for an excuse to buy one. It’s the greatest!

I started making lemonade regularly and it was awesome. Then one week I had a berry overload and thought, “what if I put blueberries IN the lemonade?” So I did and it was fabulous. I mean, lemonade is awesome to begin with, and blueberries are awesome, but somehow when you put them together they are even more awesome than the sum of their awesome parts. Blueberry lemonade is the summer drink! And considering it was 95 in the shade today, I’d say it’s pretty intensely summer right now. This stuff really helps.

Blueberry Lemonade
makes about 1 quart

enough lemons to make 1 cup of lemon juice (about 6)
1 cup blueberries
3/4 – 1 cup sugar (depending on how sweet or tart you like your lemonade)*
about 1 quart of water, divided

* I’ve successfully substituted stevia for a portion of the sugar.

Make a simple syrup by putting the sugar in a small saucepan with 1 cup of water. Heat, stirring, just until the sugar is dissolved, then remove from heat.

Meanwhile, put the blueberries into a blender or food processor and pulverize.

To help your lemons yield more juice, roll them back and forth on a surface, applying pressure with the palm of your hand. Cut each in half and juice them. This is particularly fun using a JUICE-O-MAT!

Stop when you have 1 cup of juice.

Add the blueberry pulp to the lemon juice.

Add enough cold water to make 2 cups. I just do this to thin it out, making it easier to strain.

Strain.

Add the simple syrup to the juices and whisk.

Pour into a glass pitcher, straining a second time if you are picky, then add enough cold water to total about a quart (you can add more water to make a less intense drink) and stir or shake.

Chill for at least half an hour; an hour is better. Serve with ice, garnished with lemon slices.

This would probably be equally awesome made with raspberries, strawberries, blackberries, or any other berry, but I’ve been so enamored of the blueberry variety I haven’t even bothered to try any others. You can also simply omit the blueberries for plain lemonade – it’s also very delicious.

Black Bean Soup with Avocado Cream

As a food blogger, I sometimes have to make decisions, which I’m not particularly good at doing. I must decide if I’m posting regularly enough, if I have something interesting enough to post, if I have something original enough to post…it’s a hard knock life. Okay, it’s not all that hard. But sometimes I think no one will possibly be interested in what I’ve made and I have to decide if it’s worth posting. There are a million black bean soup recipes on the internet and in every basic cookbook. Who needs another one? Especially one that has nothing original about it. It’s true I didn’t consult any recipes when I made black bean soup tonight – I just made it. But it’s also true there’s absolutely nothing special about it. However, it’s also true that after getting a second helping, Mark said it was “totally awesome” and I rather agreed, and in cases like that I err on the side of posting instead of not. For one thing, I do sometimes refer to my own blog to recall how I made something I want to repeat, or improve, so if nothing else I’m doing it for myself. But for another thing, I like reading other blogs even when they are about something I’ve made a bunch of times before. For one thing, I think it’s interesting to see how other people think and cook even basic things, and for another, even if I don’t learn anything, sometimes I’m simply reminded I haven’t had something in a while. So, I’m sorry, but tonight I haven’t made anything that will make you gasp in surprise, and I haven’t visited anywhere exotic or special, and my cats haven’t even done anything particularly photogenic. All that’s happened is I made a simple black bean soup and it was good. And that’s tonight’s post.

Black Bean Soup with Avocado Cream

10 oz dried beans, cooked (I quick-soaked mine for an hour in boiling water, then cooked in the pressure cooker for about 8 minutes) (this is probably about the equivalent of 2 cans)
1 medium onion, chopped
1 huge or 2 normal-sized carrots, chopped
2 stalks celery, chopped
4-6 cloves garlic, minced or pressed
1 ear of corn, shucked and kernels cut off
1 jalapeno, chopped
1 tsp cumin
6 cups vegan broth, either vegetable or “chicken” flavored
1 cube frozen cilantro, or 3 Tbsp fresh, chopped
juice of one lemon, plus additional lemon wedges for serving

Avocado Cream
1 avocado
1/2 cup vegan sour cream
juice of 1/2 lime

Blend together the avocado cream ingredients and refrigerate.

Meanwhile, saute the onions, carrots, and celery in some hot oil in a soup pot or Dutch oven. When the vegetables are soft, add the garlic and saute another minute or two, then add the rest of the soup ingredients except the lemon. Bring to a boil, cover, reduce heat, and simmer for half an hour, then puree, making it as smooth or chunky as you prefer, using an immersion blender. (Or let cool slightly, then blend in batches in a regular blender.) Stir in the lemon juice. Serve topped with the avocado cream and with lemon wedges on the side for drizzling.

Another sign I shouldn’t be boring the internet with another black bean soup recipe is the fact it was IMPOSSIBLE to take a photo of it. I’m a pretty mediocre food photographer, but I was struggling even more than usual tonight. The problem is I have no patience when I’m hungry, which is why my blog will never be as beautiful as Hannah’s of Bittersweet or Ksenia’s of Tales of a Spoon, or a lot of other food bloggers out there. Moreover, the avocado cream was heavier than I thought and sank into the soup. What you’re seeing in the picture is just, as they say, the tip of the iceberg. Then I accidentally dropped the lemon wedge into the soup and it also sank. It is, however, supporting the second, visible lemon wedge. And then the lighting, which is the same lighting I take 95% of my final-dish pictures in, was just horrible today, more so than usual for an unknown reason. And black bean soup is really boring-looking to being with. IT WAS VERY HARD BEING A FOOD BLOGGER TONIGHT. But this is it! I’m keeping it real! This is my crappy picture of my delicious-but-not-innovative black bean soup! ENJOY!

It’s a good thing I have cats to fall back on. They are like a crutch for the uninspired food blogger. Look, it’s Gomez! He’s more interesting – and far more beautiful – than my food!

A vegan B&B and other adventures

Mark and I were invited to an open house at The Wildlife Center of Virginia this Saturday and decided to make a weekend out of it. The Wildlife Center is in Waynesboro, which is not terribly far from Charlottesville, which I’ve always wanted to explore. We got to see their hospital facility and then meet their non-releasable, resident animals. We weren’t allowed to see any of the patients, of which they see between two and three thousand a year. But it was cool to see where my parents’ money goes (Mark requests a donation to this place from my parents in lieu of Christmas gifts each year).

Many of the other people at the open house were eagle fans. In addition to several other eagle patients, the center is raising several eaglets from the Norfolk Botanical Garden that were orphaned when their mother was tragically killed by an airplane, and most of the visitors have been watching them grow on the center’s eagle cam. We weren’t able to see these eagles, but we did see a couple of non-releasable eagles, such as this guy.

They also have a lot of owls. You might as well know now that I am totally fascinated by owls.

After visiting the Wildlife Center, we drove about 40 minutes east to a town (if you can call it that) called Schuyler, in the Blue Ridge Mountains, where out in the middle of nowhere (we had absolutely no cell phone coverage at all) there is a most exciting establishment: a completely vegan bed & breakfast! The White Pig is a B&B and animal sanctuary, specifically for potbellied pigs. It’s a beautiful restored farmhouse:

The innkeeper, Dina, and her husband raise pigs they have rescued. I wish we had stayed two nights instead of one because we did not manage to find time to explore the farm or even see the pigs: we’re definitely going to have to go back. We DID see numerous non-living pigs. My friend Pig was right at home!

It’s a very interesting – and very wonderful – feeling to be staying in a place, especially one so remote, where everything is vegan, including the toiletries. There is even a “no meat on the premises” policy! I don’t generally feel unwelcome when I stay in a “normal” hotel or inn, but let me tell you, I felt damn welcome here! The back of the house:

After settling into the White Pig, Mark and I drove about half an hour into Charlottesville, looking for dinner. We found Lemongrass, a cute little Vietnamese/Thai place near the University of Virginia that had vegan meals noted on the menu. I noticed that some of the things marked vegetarian but not vegan were almost definitely really vegan as well, and in fact, asked about the tofu summer rolls, which fell into that category. Our waitress said I was right that the menu was sometimes wrong about the vegan items and checked with the kitchen to verify the summer rolls were also vegan.

I had the Orange-Tamarind Tofu, which was really good.

Mark had the Cashew Seitan. Let me tell you how Mark felt about the cashew seitan. None of the meals marked vegan were also marked spicy (although as I said, I believe several, if not all, of the vegetarian dishes may really be vegan), so when we ordered I asked them to bring us the selection of “hot stuff” you usually find at Thai restaurants, so we could spice them up. They didn’t remember to bring the hot stuff out, but Mark – the boy who will literally pour an entire bottle of Tabasco sauce over just about anything I serve him, and I cook fairly spicy to begin with – informed me the cashew seitan was so delicious it didn’t need hot sauce. I couldn’t refrain from stealing half of it from him, either.

Later that night we stopped by Whole Foods (I can’t decide if the Charlottesville store is bigger than my local store in Fairfax, or vice versa, but it’s pretty huge) and picked up some Sheese and crackers, which we ate sitting on the porch of the White Pig, drinking the vegan red wine and eating the vegan chocolates we’d been left, and gaping at the stars, which we don’t ordinarily get to see unobstructed by city and suburban lights.

The next morning we went down for breakfast and found two yogurt granola parfaits waiting for us, which I forgot to take a picture of, but which were delicious. Then it was time for blueberry pancakes, which Mark informed me were better than my pancakes. They were. The only time I ever cook breakfast is when Fortinbras is over and demands that I make him pancakes (he can be a bit demanding). So starting what promised to be a long day with a perfectly cooked homemade breakfast was delicious and wonderful. It was also so weird to be able to eat breakfast food while out! So weird that at first Mark avoided buttering his pancakes because we’re so used to just assuming we can’t do that. I had to remind him we could eat everything!

I also ordered box lunches from the innkeeper for us, which I didn’t photograph. They included “chicken” salad sandwiches, which Mark didn’t love because he’s not a fan of mayonnaise, but which I thought were really good. We packed up the car, including the lunches, and were off to Monticello, home of our third president and a prominent founding father, Thomas Jefferson. I’ve always wanted to see Monticello and it lived up to my expectations. Although it was sweltering (95 degrees!), it was just lovely. We had some time before the tour, which I had booked earlier, and stopped into the cafe, where they serve food made with produce grown in Jefferson’s garden, and I was shocked to find a vegan wrap available, although I didn’t buy it since we had our box lunches. I tell you, I barely feel weird any more as a vegan! The world is beginning to find me normal!

Not much else really has to do with veganism or even animals in the rest of this post, but I’ll share a few photos because Monticello is simply breathtaking, and well, it is Independence Day!

We had a really great weekend. I highly recommend that any of you in the DC metro area make a weekend trip to the White Pig, and if you haven’t seen it (and even if you have), Monticello. In fact, any of you who plan to visit DC from other areas may want to consider including this as a side trip. Charlottesville and Monticello are just over two hours from DC, as is the White Pig. After a few days battling crowds, traffic, and the general unpleasantness that is DC, believe me, you will cherish a night or two in a serene setting, especially one that’s all-vegan!

Real (or as real as it’s going to get) Root Beer

I’ve been making my own sodas for a while now. I started off cheating, which, by the way, I hear is all the rage right now. It seems like a lot of people are buying those SodaStreams and mixing the soda water they make with different flavorings. I have nothing against that, in fact, I’m planning to one day get my own CO2 tank and rig up my own version of a SodaStream so I can make seltzer. But ever since I perfected my real ginger ale recipe, I’ve been hooked on really making soda. In addition to ginger ale, I liked making root beer and birch beer, but I was daunted by the prospect of looking for roots and for a long time stuck to using extracts. The sodas I made from the extracts tasted fine, but I knew that couldn’t go on forever. I’m just not an extract kinda gal.

So I bought Homemade Root Beer, Soda & Pop by Stephen Cresswell. Now, I really like this book and it has a lot of great recipes I’m looking forward to trying, but nearly all of the root (and birch) beer recipes call for, well, roots. And while I’m not an extract kinda gal, I’m also not the gal who knows where to go to find these roots, how to identify them, and how to dig them up unobstrusively, and the book doesn’t go into that. One day I fully intend to make root beer from roots I have dug up, and birch beer from birch trees I have accosted (the latter seems easier, frankly), but in the meantime, I turned to my friend the internet and ordered myself some roots. The main root you need is sassafras. I bought it from Amazon, but that is way, way, way more sassafras than you need. Later I found it in smaller quantities at American Spice Company and Mountain Rose Herbs, the latter from whom I have ordered before (get the bark, not the bark powder). Sassafras is slightly hard to find, I think because the FDA thinks it’s a carcinogen or something. Don’t be alarmed: a glass of root beer every now and then is not going to give you cancer. Maybe don’t drink a gallon of it a day, but then again, don’t drink a gallon of anything a day, other than water.

I also call for sarsaparilla, though you can omit it (I made my first batch without it and it was very good). Sarsaparilla is actually a little easier to find than sassafras. I bought my sarsaparilla from Jay’s Brewing Supplies, because they are a local business, but you may find it in your own local brewing store, where you may also want to purchase bottles. (Jay’s does mail order, and I’ve ordered from them back before they had a storefront, and I can recommend them for that.)

You need champagne yeast. Stephen Creswell of Homemade Root Beer, Soda & Pop prefers ale yeast, but I haven’t tried that yet. Technically you can even use bread yeast, but I absolutely do NOT recommend it. I tried it ONCE the first time I made soda and it was nasty, nasty, nasty. I’m sure I did something wrong, but I’ll always use a beer or champagne yeast from now on. It’s sold in packets just like bread yeast, and you won’t need a whole packet. Just store the unused portion in the refrigerator and it will be good for a while.

Finally, you need bottles. The recipe makes about a gallon, which is 8 16-oz bottles. I strongly recommend you use swing-top (aka EZ cap or Grolsch-type) bottles. You can drink Golsch and save the bottles, or buy them. Jay’s has them. They actually hold more than 16 oz, so I always end up filling fewer bottles than I expect to. You can also buy or save non-twist-off-cap bottles and buy caps and a capper, but the reason I strongly recommend the EZ caps is I have found root beer in particular to be unpredictable in the amount of time it requires for carbonation and I like to be able to close bottles that aren’t ready yet and reseal them. I also don’t always drink 16 oz+ of soda at a time and like to be able to reseal them for that reason too.

This recipe was lightly adapted from Homemade Root Beer, Soda & Pop, and I’ve more or less used his technique. The author calls for mixing the sodas in a one-gallon glass carboy. I have three of these: I have two from beer brewing kits, and one that is from a gallon of apple cider. They are the exact same thing; I can’t tell them apart. Jay’s sells them too, but I paid less for the apple cider than they charge, so if you want a jug, just buy some cider. You don’t need a jug though. The jug makes it easy to shake the soda really well, but before I had jugs, I just whisked everything together in a pot.

OK, FINALLY, here’s the recipe!

Real Root Beer

1/4 oz dried sassafras root bark
2 tsp dried sarsaparilla (optional)
scant 2 cups sugar
1/8 tsp champagne yeast
about a gallon of water, divided

This is my measured sassafras and sarsaparilla.

Put the dried roots, sugar, and two quarts of water in a pot and bring to a boil. Reduce heat and simmer for 25 minutes.

Then remove from the heat and let sit, covered, for another 25 minutes.

Strain the liquid. This is only half of it – I wanted to decant it into a clear container so you could see the color. You might be able to make a second batch from the roots – I haven’t tried that.

If you have a gallon jug, pour the liquid into the jug through a funnel. If you don’t have a jug, skip this step and just put the liquid in a 6-quart pot.

Add two more quarts of cold water, cap jug, and shake. (Or whisk well in a pot.) You want to cool the overall temperature of the soda to 70 to 76 degrees Fahrenheit. You can do this by just letting it come down to room temperature naturally (if you are patient), by putting it in the refrigerator, or by setting it in an ice bath. Whatever floats your jug. Just make sure it cools down to room temperature (you don’t even really need a thermometer) so you don’t kill the yeast when you add it.

Add the yeast to 1/4 cup lukewarm water (about room temperature) and whisk. Let sit for a couple of minutes.

Add the yeast to the soda, cap the jug, and shake vigorously for a minute or two (or add to pot and whisk very well).

Use a funnel to pour the soda into the bottles and close or cap the bottles. Leave about 1″ head space at the top of the bottles.

Put the bottles in a cool, dark place – not a refrigerator, but maybe a basement. I’m not going to lie to you: explosions are possible and I’ve had root beer explode, so what I do is put the bottles in my laundry room and cover them up with a giant trash bag so I can contain the mess if disaster strikes. I haven’t had one explode since I’ve been doing that, so I think maybe it subdues them into submission. After 48 hours (maybe sooner if it’s really hot in your house), check the carbonation by opening one of the bottles. You can generally tell by how fizzy it seems when you open it, but you’ll also want to take a sip to judge it. If it’s as fizzy as you want it, move the bottles to the refrigerator. If it’s not, keep testing it every 12 to 24 hours. Every recipe I’ve ever read has made it seem as if it’s usually ready right around 48 hours, but I’ve had some sodas that have taken up to a week to be fully carbonated. If it takes that long, I usually put it in the refrigerator anyway and let it finish carbonating slowly.

Refrigerate the bottles for at least 24 hours. I’ve found that sodas really taste best after about a week of refrigeration, but bear in mind, although refrigeration greatly slows down the fermentation, it does not stop it, and your sodas will build up more and more carbonation if you leave them in the fridge. If you aren’t drinking them fast enough, open them periodically to release the pressure…although I wouldn’t keep doing that or you’ll have the reverse problem and they’ll go flat. You’d be wise to open your bottles over the sink regardless how long you’ve had them. I don’t know what it is about root beer, but some bottles in the same batch just seem to have different levels of carbonation, so I don’t trust any of them to not geyser all over me.

After it’s chilled for at least 24 hours, it’s time to drink! This is a little 8-oz bottle I saved from some commercial soda that I bought just for the bottles. I had a hard time choking down that soda, I’ll have you know. But I like to make a few small bottles to use when checking the carbonation, and also 8 ounces is about how much soda I really want to drink at a time.

Pour into an icy mug and enjoy!

Root beers and other sodas were originally created as health tonics. I’m not going to tell you that something with this much sugar is a health drink. I don’t drink that much of even my homemade soda, although it’s far less sweet than commercial soda (and the yeast consumes a lot of the sugar; it’s not as sugary as it sounds). But there is something about this homemade root beer that makes me consider it a restorative. I like to drink a bottle after a long, hard morning of working with raccoons. I come home exhausted and make a quick meal that I serve with my homemade root beer and suddenly I feel refreshed. And I came home tonight with a headache but a glass of root beer has given me the strength to go put together this baker’s rack that arrived today…which I’d better get working on!

This post is dedicated to my paternal grandfather, who I remember making root beer in his basement when I was a kid. He died years ago and unfortunately my father doesn’t know how he made his root beer. I wouldn’t be surprised if he used an extract, as I don’t recall him tramping around the woods collecting roots, but making root beer reminds me of him and I think that’s nice. Wish you were here to share a mug, Granddaddy!

Two Dips

No, the title of this post does not refer to me and Mark. Nor Gomez and Torticia. No, in fact I made two dips for dinner tonight: baba ganoush and smoky herbed bean. Why? Who knows. Tonight’s dinner was all over the place. I had some eggplants from the farmers market I needed to use. I also wanted to clear out some of my dried beans because I’m expecting a shipment from Rancho Gordo next week. There were frozen falafel in the freezer. Frozen naan. More vegetables from the farmers market. I even made Mark some barbecued seitan. Somehow it all seemed to work together, though.

Baba Ganoush

2 smallish or 1 large eggplants (about 1 pound)
3 Tbsp lemon juice
1 Tbsp tahini
1 small clove garlic, minced or pressed
1/2 tsp smoked salt (or to taste)

Preheat the oven or toaster oven to 400 degrees Fahrenheit. Prick the eggplants all over with a fork.

Roast eggplant for about an hour, or until very soft, turning every 15 minutes or so.

They will have caved in on themselves.

Mince or press the garlic. This is waaaay more than you need; I was making several dishes requiring garlic at the same time.

Juice a lemon.

When the eggplant is done, let cool until it can be handled, then peel it and put it in a food processor or blender with the rest of the ingredients.

Process until smooth.

Makes about a cup, maybe a little more.

Smoky Herbed Bean Dip

8 oz dried white beans (such as cannellini), soaked (speed soaked is okay), or 1 can of beans
1 clove garlic, minced or pressed
3 Tbsp olive oil
2 Tbsp lemon juice
1 tsp dried parsley (a couple tablespoons fresh, minced, would be even better)
1 tsp smoked salt
1/2 tsp smoked pepper
1/2 tsp smoked paprika
1/2 tsp dried oregano (or 2 tsp fresh)
1/2 tsp dried rosemary (or 1 tsp fresh)

Cook beans until very soft – I used my pressure cooker. Drain beans and place in a food processor or blender with the rest of the ingredients. Process until smooth.

Garnish with vegan “bacon” bits, and/or drizzle with additional olive oil, if desired.

Here’s everything, minus Mark’s bonus barbecued seitan. I also made yellow wax beans. In retrospect, those falafel don’t make for a very appetizing photograph.

It’s hard to follow cat party, but if you don’t need the next four minutes of your life, you can watch Gomez get high, and Torticia not get high, on the ‘nip.

I want to keep you posted on Rica and Rowena Raccoon, but it is very, very, very hard to take a picture of active raccoon kits, especially with an iphone. This is the best I could do. They are waiting to be fed. Next time I’ll wait until after I feed them and they are at least a little quieter!
